The New Year is a great time to make a fresh start to live a happier, more balanced life.
Happy New Year! This month, our blog will be focusing on tips and ideas for making a fresh start. Do you have a New Year’s Resolution yet? If so, how do you plan to make sure you will achieve your goal? How can you assure yourself it is not simply a wish you will wish every January, simply to forget by February? There is a huge difference between a goal and a wish. Which category your New Year’s Resolution falls into, depends on you. Here are three tips to make this year’s goals stick:
- Tell someone! To tell someone about your goal gives them the permission to ask about your goal. This is called an accountability partner. Usually, a workout partner will help with getting you to go to the gym or workout. Maybe fitness is not your goal, it could be you strive to have a closer relationship with God. You could give a friend permission to call you if you don’t show up to church on Sunday. Perhaps your goal is to further your education so you can apply for a promotion or a new job. Tell a friend, and ask them to check in with you from time to time regarding your progress.
- Believe it! The best way to achieve a goal is to believe it is possible. If your goal is to get back to school, sit down and figure out when you will graduate. Mark it on a calendar, believe it will happen and achieve the goal, whatever it is.
- Start it! You can only get there if you take the first step! Let’s say you want to get back to school, call the admissions office on Monday and see what is needed to start the process. As the 4-H Extension Agent, I have assisted many young people with college applications and the financial aid maze. It can take time to get everything together to g0 to college. Don’t expect to start classes right away, but don’t let delays stop you. You can start classes later in the year.
What do you do should you get off track? Start again! If you did not meet your goal, or haven’t reached your goal yet, keep working on it. I started a “Read the Bible in a Year” plan three years ago; I plan to continue the plan and finish in 2016! Be positive with yourself and if you do not complete your goal, continue to work toward it in 2017.

Enjoy a high-energy game of exercise bingo as you race other teams to see who can win! This game is available at your local extension office.
The New Year is upon us, and it is so fun to celebrate its coming with our families. Do you have a favorite New Year’s Tradition? If not, there is still time to plan one for this year! Here are a few fun and easy ideas to inspire you:
- New Year’s Eve Bonfire– roast hotdogs and marshmallows and enjoy hot chocolate by the fire. More family friendly campfire recipes
- Game Tournament– set up a tournament of games. You can play Minute to Win-It Style games, board games, or even electronic/video games. Each hour until midnight, let a family member choose their favorite game to play.
- Balloon Countdown– You will need a balloon for each hour of the countdown, depending on when you start. I recommend starting at 6PM, so you would need six balloons. Place a slip of paper with a craft, game or activity written on it. Place a slip in each balloon, then blow up the balloons and label each one with a number, representing each hour in the countdown until midnight. For example, at 6PM, have a family member pop the balloon with the number six on it, and then the family would do the activity listed on the slip of paper. Continue to pop balloons until midnight! Some of the activities you might include are: make paper hats, write down New Year’s Resolutions, make noisemakers, enjoy fireworks, etc.
- Progressive Hors d ’Oeuvres– this sounds fancy, but is really simple. Just prepare your family’s favorite snacks. Each hour, enjoy a different snack until midnight.
- Family Movie Night is another inexpensive favorite. Make homemade pizza or pop popcorn and enjoy a night in with your family.
- Fireworks can also be a fun activity, but be sure to read our tips on firework safety beforehand.
- Balloon Drop– a nice alternative to fireworks. Use masking tape to tape together 2 lengths of netting. Extend the tape to make a “rip cord.” Fill with balloons and confetti and tape to the ceiling (use painter’s tape so you do not damage the paint). At the stroke of midnight, pull on the rip cord and enjoy a cascade of celebratory balloons and confetti!
- And finally, you can go all in and recreate your favorite game shows. Imagine win-lose-or draw, family feud, the price is right…the possibilities are endless.

Clear evidence of mastering a skill is being able to employ it in one’s everyday life. Knowledge is only as good as how we are able to use it. 4-H dedicates itself to educating youth with research based curriculum not only for their own benefit but also so they can share that knowledge with others. When we “pledge our hands to larger service”, this can take on many forms. It may look like teaching youth in a community center about robotics or gardening, making meals for the military and first responders, or cleaning up trash in local parks. In all our service, it is important that regardless of what this looks like that we focus on meeting a need in our community. Identifying these needs is sometimes difficult if they are not part of what we see around us regularly. Talking to people who do not have the same life experiences we do is a good way to start seeing the world in a different way and thinking about ways you can help others who haven’t had the same opportunities. In Escambia County, around 30% of our youth population lives in poverty (US Census). Outcomes of living in poverty are hunger, poor housing, poor health, and lower educational scores, just to name a few. Our 4-Hers are learning to use the skills they have gained in 4-H in creative ways to help address some of these issues. One club has received a grant to raise a hog that a youth will show and have processed so the meat can be included in food boxes for local families. Another club raised funds to help support the Council on Aging to provide air conditioning units to the elderly, who are more likely to be impoverished, during the hot summer months.

Whether poverty, pollution, safety, education, healthcare, or another issue is one that effects your community, the skills youth learn through 4-H can help address it. Not only does this help those around us live healthier and more productive lives, but it helps those who serve connect to their community and learn to give back. As with all 4-H projects, our goal is to help youth become more engaged and knowledgeable citizens that contribute to their world in positive ways. We encourage our youth to embody the spirit of generosity all year long, but during this season, be sure to explore the needs in your community you can help to change, even in the smallest way. If you need help thinking of how to best give back, contact your local 4-H Agent, local non-profits, or look up your county’s information in a database such as the US Census’ QuickFacts (http://quickfacts.census.gov/qfd/states/12000.html) and think about what kinds of problems might arise from the information you find there.

The holidays are often filled with time-honored traditions that include some of our favorite meals and foods. As you celebrate, think of little changes you can make this holiday season to create healthier meals and active days. An added bonus, these small changes may help you to avoid those extra holiday pounds we all fear each year. Happy Cooking!
In the Kitchen:
• For gravies or sauces — if you are making pan gravy, first skim the fat off pan drippings. For cream or white sauces, use fat-free (skim) milk and soft tub or liquid margarine.
• For dressings or stuffing — add low-sodium broth or pan drippings with the fat skimmed off instead of lard or butter. Use herbs and spices and a whole grain bread for added flavor.
• For biscuits — use vegetable oil instead of lard or butter and fat-free (skim) milk or 1 percent buttermilk instead of regular milk.
• For greens — use skin-free smoked turkey, liquid smoke, fat-free bacon bits, or low-fat bacon instead of fatty meats.
• For sweet potato pie — mash sweet potato with orange juice concentrate, nutmeg, vanilla, cinnamon, and only one egg. Leave out the butter.
• For cakes, cookies, quick breads, and pancakes — use egg whites or egg substitute instead of whole eggs. Two egg whites can be substituted in many recipes for one whole egg.
• Use unsweetened applesauce or mashed ripe bananas instead of butter.
• Try cutting the amount of sugar listed in recipes in half.
• Use spices to add flavor such as cinnamon, allspice, or nutmeg instead of salt.
• Try baked apples with cinnamon and a sprinkle of sugar instead of apple pie.
• Invite your guests to make their own parfait with colorful sliced fruit and low-fat yogurt.
For meats and poultry (chicken and turkey):
• Trim away all of the visible fat from meats and poultry before cooking.
• Take off poultry skin before eating.
• Broil, grill, roast, poach, or boil meat, poultry, or fish instead of frying.
• Drain off any fat that appears during cooking.
• Chill meat and poultry broth until fat becomes solid. Skim off fat before using the broth.
• Skip or limit the breading on meat, poultry, or fish. Breading adds fat and calories. It will also cause the food to soak up more fat during frying.
• Choose and prepare foods without high fat sauces or gravies.
When Shopping:
• Start with a lean choice.
• The leanest beef cuts include round steaks and roasts (round eye, top round, bottom round, round tip), top loin, top sirloin, and chuck shoulder and arm roasts.
• The leanest pork choices include pork loin, tenderloin, center loin, and ham.
• Boneless skinless chicken breasts and turkey cutlets are the leanest poultry choice.
Use the food label to help you choose
• Choose extra lean ground beef. The label should say at least “90% lean.” You may be able to find ground beef that is 93% or 95% lean.
• Processed meats such as hams, sausages, frankfurters, and luncheon or deli meats have added sodium. Check the ingredient and Nutrition Facts label to help limit sodium intake.
• Fresh chicken, turkey, and pork that have been enhanced with a salt-containing solution also have added sodium. Check the product label for statements such as “self-basting” or “contains up to __% of __.”
• Lower fat versions of many processed meats are available. Look on the Nutrition Facts label to choose products with less fat and saturated fat.
De-Saturate
• Use a nonstick pan with vegetable cooking oil spray or a small amount of liquid vegetable oil instead of lard, butter, shortening, or other fats that are solid at room temperature.
Enjoy the Food, Fun, Friends and Family!
Cheers to Good Health
• Quench your thirst with low-calorie options. Drink water with lemon or lime slices. Offer seltzer water with a splash of 100% fruit juice.
Be the Life of the Party
• Laugh, mingle, dance, and play games. Focus on fun and enjoy the company of others.
Give to Others
• Spend time providing foods or preparing meals for those who may need a little help. Give food to a local food bank or volunteer to serve meals at a shelter during the holiday season. Giving back is a great mood booster.
Make Exercise a Part of the Fun
• Make being active part of your holiday tradition. Have fun walking and talking with family and friends after a holiday meal. Give gifts that encourage others to practice healthy habits such as workout DVDs, running shoes, and reusable water bottles.
Enjoy the Leftovers
• Create delicious new meals with your leftovers. Add turkey to soups or salads. Use extra veggies in omelets, sandwiches, or stews. The possibilities are endless!
Be sure your family and friends enjoy the food and fun, but focus on the time together. Remember this season is all about the memories, not just the food. You will feel better and enjoy your holiday time with less worry if you focus on staying healthy this season.

Save money and make fun memories this year by making your own gifts!
This Christmas, save money and enjoy the season by hand-making gifts for your children’s teachers, friends, and your co-workers. We have all received the “awesome” gift of a plaid tie or vanilla candle which is appreciated, but lacks a personal touch. Why not use this opportunity to make a little mess in the kitchen as well as some holiday memories with your kids? You could even do this as an activity for your 4-H Club’s Holiday Party. In years past, our family has made many gifts for those who we would like to receive a little something. In our family alone, we have six teachers and between my husband and I there are 27 co-workers to purchase for, we can’t afford to go out and buy everyone a $10-$15 gift. Which would mean spending nearly $500 for those small gifts!
The question is, what can you make? Fresh-baked goods are a wonderful option, but can’t be baked too far in advance without freezing. There are many other options, such as candy, jams, and even pickled garlic! Cookies, brownies, or soup in-a-jar gifts are also fun options (especially for single parents or working moms). One year, our family made hot chocolate mix for everyone. Jelly jars filled with powdered milk, cocoa, and marshmallows were a great, well-received gift and only cost $1.75 each! This was much more economical ($58 compared to $495). We decorated our jars with a little bit of material and tied a nice bow. You could even combine your ingredients in a zipper bag and place in a mug for the gift or use a funnel to pour it into a plain glass or plastic tree ornament. Your imagination is the limit, and your relationships with your children will benefit just as much as your pocketbook!
4-H teaches youth to shop responsibly with our Consumer Decision curriculum and Consumer Choices events. Youth can also use 4-H’s My Financial Future Curriculum, youth will learn budgeting, how to balance a bank account, how to deal with emergency expenses and how to make educated shopping choices. Leon County 4-Hers grow gratitude and compassion through service-learning
Developing a heart for giving back and helping others is one of the most important personal benefits youth can obtain through active involvement in a 4-H program. During this season of thanks , 4-H members all over the United States will put the third sentence of the 4-H pledge into action as they “pledge their hands to larger service” by planning and carrying out a multitude of community service activities to help families that are in need. Since its inception in the early 1900’s the 4-H program has place an emphasis on improving the community in which they live through the guidance and care of adult volunteers.
As we pause this week to celebrate the season of “Thanks” we must also remember to emphasize to our youth that the focus should not be on who can consume the most food, but instead to use the meal as a vehicle to connect with family and friends while enjoying their company. Adults and youth alike should take a pledge during the meal time that no one will post, text, or make a call during family time…but instead exercise some of the great communication skills they have learned in 4-H and get to know each other better. It’s amazing how much our families and friends don’t know about us even though we see them almost every day. Youth should also be encouraged to think of those that are less fortunate and seek out ways they can help those in need as a club, family or as an individual project. A great club or family game can be initiated that requires youth, friends and family members to write a list of all the things they are thankful for and provide fun prizes for the winners… which should be everyone that participates.
As a 4-H Youth Development Professional I am also grateful that the largest serving youth program in the world continues to make a positive impact on the lives of young people. Using the 4-H pledge as a guide I have shared just a few impacts below.
I pledge my head to clearer learning…”I’m thankful that through active participation in a variety of programs and activities youth are learning decision making skills that will help them in school and later in life as they develop into responsible adults”.
I pledge my heart to greater loyalty…” I’m grateful that continual 4-H club involvement provides youth an opportunity to build caring relationships with members of the club as well as the adult volunteer leaders.
I pledge my hands to larger service…I’m thankful that the community service projects that are carried out in each club entitles you to make someone’s life a little brighter.
I pledge my health to better living for my club, my community, my country, and my world….I’m thankful that through their participation and completion of projects youth are learning what to put in their bodies to keep them healthy as well as what not to put in them.
Let’s continue to use 4-H as a vehicle to make our world better by taking time to invest in your future leaders of tomorrow…..our 4-H members of today. A Liberty County mother and son participate in the UF IFAS Extension Rediscover Bread Baking And Jam-Making Workshop.
Many years ago, a young girl attended a 4-H livestock club meeting along with her brothers and her father, who was serving as the volunteer club leader. During the meeting the local county 4-H Agent paid the club a visit to talk to the members about participating in the upcoming 4-H County Events Contest. The agent shared different project areas and types of demonstrations and speeches that could be done. Up until that point, the 4-H member had not been exposed to any projects outside the realm of livestock.
The agent had brought a colorful Fleishman’s Yeast Bread Cookbook that caught the eye of the young girl (at that time, Fleishman’s Yeast was a national sponsor for the 4-H Breads Project). The girl went home excited and told her mother that she wanted to do a demonstration on yeast breads. Her mother smiled and said, “I’ve never made yeast bread, but we will give it a try.” The 4-Her and her mom began practicing and discovered great success at baking yeast breads, so the girl began organizing her food preparation demonstration.
The 4-H breads category was very popular that year with a record number of competitors, but that didn’t scare this member. She won the county and district contests her first year competing which pushed her on to state competition in which she placed third in the state. For this 4-H member who had struggled in school, much needed confidence began to grow. From that point on she began considering a career as an Extension Agent.
After high school, this young lady went on to college and obtained a degree in Home Economics. She has served 30 years as an Extension Agent encouraging youth to be all that they can be in whatever their interests and desires. Yeast breads have been a vehicle for this agent to teach people many life lessons and skills. You may know this agent as Monica (Lewis) Brinkley, UF/IFAS Extension Liberty County Extension Director.
In honor of November, National Bread Month, and the fond memories of learning to bake yeast breads with her late mother, Monica and her Family and Consumer Sciences colleagues across the Florida Panhandle have put together a workshop titled, Rediscover Bread Baking And Jam-Making to teach families how to make bread in a bag and preserve jam. The families work together and carry home whole wheat yeast bread and preserved jam to enjoy together. Although the bread and jam do not last long, the memories created and skills learned will last a lifetime. For many people, their holiday shopping begins on Black Friday. Cyber Monday, which falls after the Thanksgiving weekend is a great way to order gifts online- especially if you do not like crowds. Many retailers will lure shoppers in on Cyber Monday with free shipping deals. UF IFAS Extension offers some great tips for keeping your personal information secure when shopping online, as well as advantages and disadvantages of using prepaid cards. Between Brown Thursday (businesses that are open for shopping on Thanksgiving Day), Black Friday and Cyber Monday, here are a few tips to help cope with the phenomenon after-Thanksgiving shopping has become.
- Plan ahead—many retailers will have their ads out for the season well before Thanksgiving to allow for consumers to plan ahead and see who is offering which item at the best price. Planning ahead will help you have a fun experience.
- Set a budget—this is a vital step to any shopping! You have to decide how much total you plan to spend or you will have to eat bread and water all December and January! Seriously, set a budget and stick to it. Make your list and remember, if you said $20 each person, you really mean $20 limit for each person. There is some wiggle room with this if you find a great gift for one person on sale, the extra $5 or $10 could go to someone else’s gift.
- Check the ads—know what retail cost is before you fall into a trap. Retailers may taught a great television at only $150, however, what is the regular retail for that brand? Is it really a $175 television? The internet can be your friend with consumer reviews and the information is already out for the ads. Check out www.blackfriday.com for the deals and do some research ahead of time.
- Form a team—this sounds strange, I know. I have a group of friends that are a Black Friday Team. We get together and look at the ads. If I am interested in bed sheets that are on sale at one retailer and my friends wants some tools at a completely different retailer, we will divide and conquer. I will go to the tool store and she can pick up my sheets. We are able to both get what we want and essentially be in two places at once!
Holiday shopping can be leisurely and enjoyable. That is not shopping that is done on Black Friday. The shopping that is done on Black Friday is more like a sport. It’s fast-paced, very exciting and can also be rewarding. Follow the tips above and have fun shopping, oh yeah, and drink some coffee. It’s hard to get up at 3:00 in the morning and face the crowds without some coffee!

For more than 33 years, Priscilla Weaver has been teaching youth about animal science through the 4-H club program.
This time of the year you can find her at the North Florida Fairgrounds in the livestock buildings. As the North Florida Fair’s Livestock Director she’ll be busy putting on a great livestock show and competition for youth and adults. Priscilla Weaver is passionate about growing the 4-H animal science program. For more than two generations (33 years) Priscilla has been teaching youth about animal sciences and animal husbandry as the Kapra Kids Dairy Goat 4-H Club Leader in Wakulla County, Florida.
Priscilla started the club when she saw a need for her children and their friends to have an opportunity to participate in 4-H. “Youth need things like 4-H in their lives to grow up well,” says Priscilla. When asked why she thinks youth need 4-H Priscilla replied, “4-H teaches young people so many things, things like responsibility, caring and the ability to see a project through to its end.”
Priscilla has raised dairy goats her whole life, so when she started her club she worked with her club members in that project area. Her club has had as many as 16 members before and has won uncounted number of awards and ribbons showing their goats and their dairy by-products like cheese and soap at the Florida State Fair in Tampa, Florida
. Priscilla feels strongly about teaching today’s youth about animal husbandry saying,
“It teaches them so many things; math and science, recordkeeping, planning and responsibility. Participating in a 4-H animal project also teaches caring and empathy by having responsibility for an animal,” says Priscilla.
Empathy and caring are two traits Priscilla has in abundance. When not volunteering for 4-H, she spends her free time working at the fair, caring for her own livestock, or volunteering with the senior group at her local church. These traits also display in the activities of Priscilla’s 4-H club as they participate in many community service projects and also in her leadership of multi-club service projects at places like the local senior center.
When asked what has kept her going as a 4-H volunteer for so many years Priscilla will tell you that it’s because, “she loves working with the youth.” Because of volunteers like Pricilla, 4-H is able to help youth grow resilience, empathy, and responsibility through animal science programs. These are life skills that will help youth be successful no matter what career path they choose. Florida 4-H offers hundreds of events and activities to support 4-H clubs and members. 4-H events are specialized programs designed and conducted to SUPPORT a 4-H members projects at the club, county, district, state, and national levels. Events and activities are typically tied to a project (or curriculum) area and help the youth develop and demonstrate mastery; one of four essential elements that must be present in a young person’s life in order for positive youth development to occur. Last month, Tracey Tesdall and Travis Shepard shared resources and tips for navigating Florida 4-H Events and activities to help parents and volunteers guide their 4-H members. You can watch the 45-minute presentation online, but here are some key points and pieces of information that they covered:
What resources are available?
Policies, Rules, and Guidelines for 4-H Events:
- General 4-H Policies on membership and participation can be found online. Note that the 4-H Age policy did change this year on September 1st. Rules related to specific contests and competitive events can be found on the events page.
- Overnight Events Policy- 4-H Members “real age” 19 have elevated risks associated with their attendance as a participant. Members “real age” 19 will not be housed with youth age 18 or younger. Otherwise members are housed within 2 years of age. Members who are real age 18+ are considered an “adult” in all illegal activities and conflicts.General Tips and Reminders:
- State Level Competitive Event Rules– Youth must be enrolled in 4-H at least 30 days prior to the events and they much have completed at least one year of 4-H work including the current year, as established by the 4-H Agent. 4-Hers on a state level winning team may not compete as FFA members the next year or vice-versa.
- Cancellation policy– Participants who register for an event and cancel before registration closes will receive a full reimbursement of any associated fees. Once registration has closed, no refunds will be awarded unless a documented medical emergency or natural disaster inhibits a participant from attending.
General Tips and Reminders:
- Pay close attention to state event deadlines
- Payment should always come from your county, unless otherwise specified (contact your local 4-H Office to be sure!)
- Make sure that your participation form is updated and current before an event (in case of an emergency). This applies to both youth and adult chaperones and volunteers. Forms can be updated electronically in 4HOnline or you can print and complete a paper participation form.
- Make sure you are familiar with event schedules, directions, dress codes, and what to pack (if overnight). Your local 4-H Office is a great resource. State-level event information can be found online and is updated often.
